Why People Avoid Gluten
Whey, casein, pea, and rice proteins are naturally free of gluten, so gluten in a protein powder comes from added ingredients: wheat-based thickeners, malt flavoring, barley grass, cookie or cereal pieces, and oats processed alongside wheat.
For celiac disease the standard is a certified gluten-free product (under 20 parts per million), because cross-contact in shared facilities never shows up in an ingredient list. A label without wheat, barley, or rye is a starting point, not a guarantee.
People with non-celiac gluten sensitivity can usually rely on the ingredient list alone. Because the filter reads every mention, a label whose allergen statement names the ingredient, even to say the product is free of it, is also dropped. The list errs toward leaving products out.

1,959 of 2,413 on-market protein powder labels with an other-ingredients list name their protein source and list no wheat, barley, rye, malt extract, or gluten.
Ranked by label detail (stated amounts, named forms, a complete other-ingredients list), then by fewest other ingredients. The ranking reflects what the label discloses, not product testing, purity, or efficacy.
